Japanese Home-Style Fried Rice

If there’s one dish that never gets old, it’s Japanese home-style fried rice. Simple ingredients. One pan. Just a few minutes. Crispy bacon, fluffy eggs, fragrant green onions, and perfectly separated rice come together into something incredibly comforting and satisfying. This is the kind of meal you make over and over for years. No complicated techniques. Just honest home cooking with big flavor.

Simple Japanese Fried Rice 🍳

Ingredients

  • 2 cups cooked rice
  • day-old rice is best
  • 4 eggs
  • 5 slices bacon
  • 1 bunch green onion
  • 1 –1.5 tsp salt
  • Lots of black pepper
  • About 1 tbsp soy sauce
  • About 1 tbsp cooking sake
  • 1/2 –1 tsp MSG or chicken powder optional

Instructions
 

  • — HOW TO MAKE —
  • ① High heat the whole time
  • From start to finish, I cook this on high heat.
  • ② Cook the bacon first
  • Cook until the bacon releases plenty of fat.
  • I usually don’t add extra oil — just bacon fat.
  • ③ Add the eggs
  • Crack the eggs directly into the bacon fat.
  • The important part is NOT fully mixing the eggs.
  • Some soft parts, some cooked parts…
  • that texture makes fried rice better.
  • ④ Add the rice
  • Add the rice and mix by cutting through it instead of smashing it.
  • The goal is to keep the rice light and separate.
  • ⑤ Season it
  • Add salt, black pepper, soy sauce, and sake.
  • Optional MSG or chicken powder.
  • ⑥ Add green onion last
  • Toss in the green onion at the end and cook briefly.
  • Extra black pepper is great on top.
  • Ketchup, seaweed, bonito flakes, garlic powder, and curry powder also work surprisingly well.
  • If you don’t like MSG, you don’t need to use it.
  • But personally… I think it tastes better with a little 😌
