Infinite Japanese Sweet Potato (Mugen Satsumaimo)

- 1 Medium Japanese Sweet Potato Satsumaimo
- 2 tbsp Soy Sauce
- 2 tsp Sugar You can use cane sugar or lakanto for a healthier option
- 10 g approx. 1 tbsp Butter

- Cut the sweet potato into bite-sized pieces (cubes or wedges).
- Soak them in a bowl of water for about 5 minutes to remove excess starch.
- Drain the water thoroughly.
- Seasoning
- Place the sweet potatoes in a microwave-safe container.
- Add the soy sauce, sugar, and butter.
- Microwave Cooking
- Cover the container loosely with plastic wrap.
- Microwave at 1000W for 5 minutes.
- Remove carefully (it will be hot!), and toss everything together so the melted butter and seasonings coat every piece.
- Cover again and microwave for another 3 to 5 minutes.
- Done! Once the potatoes are fork-tender and have soaked up that savory glaze, they are ready to serve.
