Infinite Japanese Sweet Potato (Mugen Satsumaimo)

  • 1 Medium Japanese Sweet Potato Satsumaimo
  • 2 tbsp Soy Sauce
  • 2 tsp Sugar You can use cane sugar or lakanto for a healthier option
  • 10 g approx. 1 tbsp Butter

  • Prep the Potatoes
  • Cut the sweet potato into bite-sized pieces (cubes or wedges).
  • Soak them in a bowl of water for about 5 minutes to remove excess starch.
  • Drain the water thoroughly.
  • Seasoning
  • Place the sweet potatoes in a microwave-safe container.
  • Add the soy sauce, sugar, and butter.
  • Microwave Cooking
  • Cover the container loosely with plastic wrap.
  • Microwave at 1000W for 5 minutes.
  • Remove carefully (it will be hot!), and toss everything together so the melted butter and seasonings coat every piece.
  • Cover again and microwave for another 3 to 5 minutes.
  • Done! Once the potatoes are fork-tender and have soaked up that savory glaze, they are ready to serve.

  • Adjusting Time: Microwave strength varies. During the second round of heating, check the tenderness with a toothpick. If they are still firm, add time in 30-second increments.
