Prep the Potatoes
Cut the sweet potato into bite-sized pieces (cubes or wedges).
Soak them in a bowl of water for about 5 minutes to remove excess starch.
Drain the water thoroughly.
Seasoning
Place the sweet potatoes in a microwave-safe container.
Add the soy sauce, sugar, and butter.
Microwave Cooking
Cover the container loosely with plastic wrap.
Microwave at 1000W for 5 minutes.
Remove carefully (it will be hot!), and toss everything together so the melted butter and seasonings coat every piece.
Cover again and microwave for another 3 to 5 minutes.
Done! Once the potatoes are fork-tender and have soaked up that savory glaze, they are ready to serve.
