Crispy Bacon & Mizuna Stir-fry

- Mizuna Japanese mustard greens
- Bacon
- Shimeji Mushrooms or your favorite mushrooms
- Katsuobushi Bonito flakes
- Soy Sauce The only seasoning!
Instructions
Prep the Greens: Wash the Mizuna thoroughly and cut into 3-4 equal sections (bite-sized pieces).
Sizzle the Bacon: Slice the bacon and toss it into a pan. Fry until it starts to get nice and crispy.
Add Mushrooms: Add the Shimeji mushrooms to the pan. Let them soak up the flavorful bacon fat as they cook.
Quick Toss: Once the mushrooms are tender, add the Mizuna. Give it a quick toss just to wilt it slightly—keep that "shaki-shaki" (crunchy) texture!
The Finishing Touch: Add a generous handful of Katsuobushi for an extra umami boost, then drizzle a splash of Soy Sauce over everything. Give it one last quick stir and you're done!
